food + football + friends - football = fun superbowl!


Once again, it's time for the Superbowl! Perhaps the previous statement gives you the wrong idea of my love for football. I have no love for football, but I do love reasons to have parties with close friends, good food, and drinks. Therefore, this event requires a post!

So, this year, it's going to be a small party: just my husband, myself, and our two best friends. So, we've got good company.... now it's time for the food. Randy and I are definately getting on the eating healthy bandwagon, so we're going to try to make it some-what healthy-eater friendly (but then again... it's the superbowl). SO, here's what I'm contributing thus far:

* Baked Potato Skins

* Cheese Fondue with Homemade Bread

* Baked Potato Skins With Creamy Spinach and Turkey Bacon - Weight Watchers recipe
Ingredients
3 medium potato(es), baked, sliced in half and cooled
1 sprays cooking spray
20 oz chopped frozen spinach, thawed and squeezed dry
4 oz light cream cheese, at room temperature
1/4 tsp table salt
1/4 tsp black pepper
3 slices cooked crisp turkey bacon, crumbled


Instructions
Preheat oven to 400ºF. Scoop out flesh of potatoes, leaving about 1/4 of potato flesh in potato. (Reserve remaining potato flesh for another use such as mashed potatoes.)
Place potato halves on a baking sheet and coat with cooking spray. Bake until lightly browned, about 15 minutes. While potato skins bake, combine spinach, cream cheese, salt and pepper in a medium bowl until well-blended.
Remove skins from oven and spoon 3 tablespoons of spinach mixture into each potato half; bake until warmed through, about 5 minutes more.
Remove skins from oven and top each half with about 1 tablespoon of crumbled bacon. Yields 1 potato half per serving

Cauliflower Poppers - Weight Watchers recipe
Ingredients
1 sprays cooking spray
1 small head cauliflower
1/2 tsp ground cumin
1/2 tsp chili powder, or more to taste
1/2 tsp table salt
1/2 tsp black pepper

Instructions
Preheat oven to 400°F. Coat a baking sheet with cooking spray.
Cut cauliflower florets into bite-sized pieces. (There should be about 4 cups.) Place cauliflower in a medium bowl and add cumin, chili powder, salt and pepper; toss well to coat.
Spread cauliflower on prepared baking sheet and bake until cauliflower is tender, but not mushy, stirring halfway through, about 10 minutes. Yields about 1/2 cup per serving. 0 points per serving.
